Soups

It's been horribly cold here lately and some nice hot soup seems to making the situation slightly better. Rather than buy a can of pregresso for something like $1.89 each, Cody and I have been making homemade soup instead.

We made pot roast soup one night. It consisted of: left over pot roast that Cody shredded, carrots that were dry on the outside because the boys left them out, left over wild rice and left over corn, a huge can of crushed tomatoes, and the left over broth from cooking the pot roast. We threw all this in to a pot of water and added a bullion cube or two. It turned out delicious and I ended up feeding us, our neighbor, a couple friends and still had left overs.

Yesterday's soup consisted of left over chicken breasts, more dried out carrots, corn, celery, broccoli water (from making broccoli soup) and half a package of noodles. It too turned out really yummy.

The broccoli soup was some steamed broccoli that was then put in the blender with some of the water from cooking the broccoli. Whirl it around, add some salt and garnish with cheese. It also turned out pretty yummy.

I have quite a few more soup recipes I want to try but I am amazed at the soups Cody and I can pull out of our rumps just using left overs or veggies that would go bad soon. It's a hell of a lot cheaper than buying at least 3 cans of soup to feed us all dinner.
