Delicious Foods
I've been trying to expand what the family eats and so we've been trying out new foods. Berries for instance. I'll eat strawberries raw, but that's about it. All other berries belong in jelly and jelly only. So I bought some raspberries and blackberries. They were both delicious raw with some yogurt.
Today I noticed the berries were starting to go bad and in their current state, no one would eat them. So I tossed them in a mini casserole dish, added a dash of sugar, and a pie crust on top. I've learned that the family doesn't like bottom pie crust because it seems to get soggy. So I make the top crust a little extra thick. I found recipes after I'd already made our "pie" and they all said to add cornstarch to the mix to thicken up the sauce. I don't mind it a little runny though. it was good by itself, it was better over ice cream. The pie wasn't super sweet and the ice cream was just perfect with it.
We also had Kale for the first time today. I wilted it with some left over shredded beef, garlic, onion, cilantro, and something else I can't seem to remember. Anyway, it turned out pretty good too. Now if only I could get the boys to try it....
